Apricot Oat Slices


Jetzt kommt endlich der süße Teil. Weil es so schön ist: in Donna Hays unvergleichlichem Englisch, aber mit deutscher Metrik:

125         g              Butter
75           g              Zucker (caster fine sugar)
125         g              Weizenmehl (flour)
50           g              Haferflocken (rolled oats)

Topping
2             Stk          Ei (egg)
200         g              Zucker, braun (brown sugar)
65           g              Weizenmehl (flour)
5             g              Backpulver (baking soda)
200         g              Aprikosen, getrocknet (dried apricots)
90           g              Kokosflocken (minzed coconut)

Preheat the oven to 180° C. Place the butter, sugar flour and rolled oats in a bowl and mix to combine. Press mixture into a 20 cm to 30 cm slice tin lined with non-sticking baking paper. Bake for 15 minutes or until golden.

To make the topping, place eggs and sugar in a bowl and beat with electric beater until light and fluffy. Fold the flour, baking powder, finely chopped apricots and coconut.

Spread the topping over the base and bake for 20 to 25 minutes or until golden.
